Scala Coconut Curry Tilapia

Scala to be very concise and thus smaller in size than other general-purpose programming languages. Scala source code is intended to be compiled to Java bytecode, so that the resulting executable code runs on a Java virtual machine. Java libraries may be used directly in Scala code and vice versa (language interoperability). Like Java, Scala is object-oriented, and uses a curly-brace syntax reminiscent of the C programming language. Unlike Java, Scala has many features of functional programming languages like Scheme, Standard ML and Haskell, including currying, type inference, immutability, lazy evaluation, and pattern matching. It also has an advanced type system supporting algebraic data types, covariance and contravariance, higher-order types, and anonymous types. Other features of Scala not present in Java include operator overloading, optional parameters, named parameters, raw strings, and no checked exceptions. Now on to the recipe for this tasty scala coconut curry tilapia! Watch out for Scala… I mean scales!

Ingredients:
8 pieces of tilapia
garlic salt
pepper
lemon juice
1 can coconut milk
1 red onion, julienne
1 red bell pepper, julienne
1 yellow bell pepper, julienne
2 tablespoons minced garlic
2 tablespoons butter
2 oz Thai Kitchen red curry paste
1/4 cup chicken or fish broth
parsley flakes

Preheat oven to 350 F.

In a medium pot, add onions, bell pepper, garlic and butter. When peppers are soft add in chicken broth, red curry and coconut milk. Let simmer for 15- 20 minutes.

On a baking sheet place the tilapia (or chicken or other type of protein), then season it with garlic salt, black pepper and lemon juice. Cook tilapia for 10 minutes or until it is halfway cooked.

Add the coconut milk mixture to the baking sheet. Continue cooking, about 10 minutes or until internal temperature reaches 145 F.

Let rest for 5 minutes.

Serve with sauce from the baking sheet. Yum! Enjoy with some rice and veggies.
