Pralined Bacon Cupcakes

These pralined bacon cupcakes are amazing! Think along the lines of pancakes doused in maple syrup with bacon. Yum! The cupcake itself is maple brown sugar flavored with some good old fashioned bacon grease subbed in for the fat. The frosting is a cream cheese and brown sugar mix. Then it is topped off with the pralined bacon! Oh my! These cupcakes are the perfect addition to your next outdoor BBQ or party!

Ingredients:

Maple Brown Sugar Cake:
1 cup brown sugar
1/2 cup bacon grease
2 eggs
2 tsp vanilla
1 tsp cinnamon
1 1/2 cups flour
2 tsp baking powder
1 tsp baking soda
1/4 cup maple syrup
1/4 cup milk

Brown Sugar Cream Cheese Frosting:
8 ounces cream cheese, softened
1/2 cup brown sugar
2 tbsp marshmallow fluff
1/2 tsp salt
2 tbsp butter, softened

Pralined Bacon:
1 lb bacon
2 cup pecans
1 1/2 cups brown sugar

Preheat oven to 350 degrees F. Line a muffin pan with paper liners.

In a medium bowl, cream together the sugar and bacon grease. Beat in the eggs, one at a time, then add in the maple syrup and vanilla. Combine flour and baking soda, baking powder, add to the creamed mixture and mix well. Lastly, stir in the milk until batter is smooth.

Spoon the batter into the cupcake liners about 2/3 full.

Bake 20 to 25 minutes. Let cool.

For the frosting, add the cream cheese, brown sugar, marshmallow fluff, salt and butter to a mixing bowl. Whip it good until it is all combined and fluffy.

Frost the cupcakes to your pleasing. I am not a cupcake decorator so please don’t judge. :)

Bacon Praline:

I mean, you can always just make the pralined bacon too without the cupcakes. It is that darn good!

Let the bacon come to room temperature. If you didn’t buy chopped pecans, chop them now. I used my mini food processor and pulsed it a few times. I like to leave a few larger chunks in so don’t worry if the pieces are not all the same size.

Preheat oven to 400 F. Line 2 baking sheets with silicone mats, parchment paper or foil. Trust me don’t skip this step.

In a bowl, pan or dish add brown sugar and pecans. Mix well.

Dip bacon in praline mixture. Coat completely!

Bake for 15 minutes. Let drain and crisp up on paper towel or cooling rack. Cut into thirds for garnishments.

Garnish those cupcake sand let your friends devour them!
