Mocha.js Cupcakes

Mocha.js is a detail rich JavaScript test framework running on Node.js and in the browser. Which makes asynchronous testing simple and fun. Mocha tests run serially, allowing for flexible and accurate reporting, while mapping uncaught exceptions to the correct test cases. Mocha is also a mixture of chocolate and coffee which is a perfect marriage of flavor in my opinion. So while you coding with the Mocha.js framework, eat these delicious mocha.js cupcakes.

Ingredients:
Cake:
1 box chocolate cake mix
1/2 cup melted or softened unsalted butter
1 cup espresso or coffee
3 eggs
Extra: 1/2 cup of espresso or coffee

Frosting:
1/2 cup shortening
1/2 cup unsalted butter, softened
2 tbsp espresso or coffee
4 cups powdered sugar, sifted
1 tbsp cinnamon
1 tbsp vanilla bean paste or extract

Garnish:
chocolate covered espresso beans ( purchased at Trader Joe’s)

Preheat oven to 350 F. In a large mixing bowl, mix together cake mix, butter, 1 cup espresso and eggs.

Line cupcake pan with liners. Fill with batter 3/4 full. Bake for 19-23 minutes.

When the cupcakes come out of the oven, brush with extra espresso over the tops. Watch that liquid soak right into those babies!

Let cool before icing, at least 30 minutes.

Now, let’s make that espresso buttercream!

Beat the shortening and butter until fluffy. Add in vanilla and slowly add in all the powdered sugar. Scrape down the sides. Add in espresso and cinnamon.
